Why does it cut off suddenly?
When I worked at Fridays (7-10 years ago), there was a certain amount of prep that went into each day. Many of the garnishes, salads and veggies were prepared from fresh produce. We cooked all pasta. Steaks and chicken arrived frozen, but not cooked. I remember making spinach dip from scratch and chopping pecans in a food processor to make pecan crusted chicken. However, the trend towards the frozen bags of food to be arranged on a plate was evident. By the time I left, spinach dip was pre-prepared and pecan crusted chicken was showing up in frozen bags. The prep cook’s job began to amount to counting out potstickers and placing them into bags so the cooks did not have to worry about portions.
Mgmt did not want to pay the prep cooks and persisted in sending them home early to try to save labor costs. The problem with that is you can’t deliver a quality experience if you aren’t ready. The customers get grumpy and less likely to return. Lo and behold, you have to cut more labor. It’s a downward spiral that few establishments have solved. One of the solutions is to order as much food pre-prepared as possible.

Norm, you may not like shit that doesn’t involve you, but you should re-listen to the conversation that night before you say that Jaffe wants people to do things they are assigned to do or get fired. That’s a bullshit and irresponsible comment. And before you say anything else, you were very tired and made no comment and I listened to that podcast three time at separate occasions (don’t ask), Jaffe did not say that. They were talking about the fundamental difference between film and game making, how game making is more communal while films does do the “you do your shit or you get fired”. Jaffe said that there should be a Union but didn’t expand too much into it. Also, his Union comment had nothing to do with firing people. You should reassess your comment since, especially, you made Gary think less of Jaffe when Jaffe had nothing to do with your misinterpretation.
And sorry if I misinterpreted since I got really aggravated when I heard your comment and had to pause the podcast to make this comment.
