Highly recommend watching (or re-watching) Mamet’s “The Spanish Prisoner” as well. Campbell Scott is always great, and Steve Martin is fantastic playing against type. Plus it has more Ricky Jay!
As for keeping the work bench mobile, what about something similar to a pallet jack underneath? It would be able to rest firmly without moving, but allow you to jack it up onto the wheels when you do have to move it.
