Slow-cooked scrambled eggs are THE best thing ever. Discovered them a few years ago and they are definitely a go to comfort food.
I like them with just salt and pepper when I do them for breakfast, and throwing in some scallions (as Adam mentioned) when I occasionally do them for dinner.

The reason why eggs have a tendency to stick to pans is that eggs are high in protein, but are liquid (until cooked). As they cook, the proteins unravel, and start to form chemical bonds with the metal surface of your pan. Because eggs are liquid until cooked, a lot of the protein can easily get into place and bind with the pan, leading to your eggs being stuck on the pan. The reason why teflon pans (and incredibly well-seasoned cast iron) don’t have the sticking problem is because the eggs are never actually in contact with the metal part of the frying pan, but are instead in contact with the coating (either teflon or the polymerized oil that makes up cast iron seasoning)
Adam, your shop seems to have so much sawdust flying sometimes, yet it always looks so pristine in the videos. Since shop infrastructure is a common theme in many of the Tested videos, what are your dust collection techniques or equipment?

I recently discovered the non-stick joy of black steel frying pans. Properly seasoned they rival the non-stick properties of any Teflon pan I’ve every had. And it will last forever, Teflon pans wear out and have to be replaced. The only thing is you have to treat black steel pans like cast iron; that is, wash, wipe dry and heat on stove right away and wipe on a fresh coating of oil or else they will rust.
Adam seems especially excited and happy about this subject. At around 4:54 it would seem that he has entered an altered state of consciousness when describing hot dogs, pizza, and doughnuts. I have been there many a time and so I understand completely.

I love slow cooked scrambled eggs. You should try it with cream cheese (mums’ recipie) and a hot chili sauce (my addition). personally I use a chipotle sauce.
